Eggplant Tomato curry in Instant Pot

Eggplant Tomato curry in Instant Pot is  very simple brinjal curry .

Recipe :

  • Eggplant – 1 pound
  • Onion – 1 big
  • Tomatoes – 2 (medium)
  • Chillies – 2

To make peanut & sesame seeds powder

  1. In a pan dry roast, Peanuts – 2 Tablespoons
  2. Sesame seeds – 1 Tablespoon
  • Let them cool and blend, Keep aside.
  • On Saute

  • Add :
    • Oil – 2 Tablespoons
    • Cumin seeds – 1/2 Teaspoon
    • Mustard seeds – 1/2 Teaspoon
    • Onions & chillies – Chopped
    • Saute onions till they turn light brown
  • Add :
    • Ginger garlic paste – 1/2 Teaspoon
    • Tomatoes – Chopped
    • Turmeric powder – 1/2 Teaspoon
    • Coriander – powder – 1 Teaspoon
    • Chilli Powder – 1 Teaspoon
    • Cook for 2 minutes
  • Add :
    • Eggplant – chop into 2 inch pieces
    • Water – 1 cup
  • Cancel Saute
  • Close & Seal the vent
  •  Manual – 3 minutes
  • Pressure – HIGH
  • Release – Quick Release after 5 minutes.

When pressure is released, open the lid and

  • Add :
    • peanut & sesame seeds powder
    • Coriander leaves
    • Close the lid for 5 minutes.
  • Server with Rice.
