MINT ( PUDINA ) RICE IN INSTANT POT

Mint Rice is Very Simple One Pot Meal , Easy and tasty for rice recipe. Can be added veggies too, add fresh or frozen vegetables to mint rice.

INGREDIENTS :

  • Basmati Rice – 1 cup
  • Water – 1 & 1/2 cups
  • Mint leaves – 1 cup
  • Coriander leaves – 1/2 cup
  • Green Chillies – 2
  • Ginger Garlic Paste – 1 teaspoon
  • Cashews – 2 tablespoons
  • Salt

Spices :

  • Shah Jeera (Black Cumin ) – 1/4 teaspoon
  • Cardamom – 2
  • Cloves – 4
  • Cinnamon Stick – 1 inch
  • Star Anise – 1
  • Bay leaf – 1

PROCEDURE :

  • Step 1 :
    • Soak Basmati Rice for 10 minutes
  • Step 2 :
    • In a Blender ,
    • Add :
      • Mint leaves – 1 cup
      • Coriander leaves – 1/2 cup
      • Green Chillies – 2
    • Add Water and blend into a smooth paste
  • Keep aside
  • Step 3 :
    • On Saute ,
  • Add :
    • Ghee (or) Oil – 1 Tablespoon
    • Spices – saute for 30 seconds
  • Add :
    • Onion – 1 (cut into slices)
      • – Saute onions till they are translucent
  • Add :
    • Ginger garlic paste
    • – Saute for 15 seconds
  • Add :
    • Mint paste
      • – Saute for 3 minutes (or) till the paste is dry
  • Add :
    • Rice ( Drain water before adding)
    • Mix Well 
  • Add :
    • Water
    • Salt
    • Mix Well & Check Salt
  • Cancel Saute
  • Press Manual – 4 minutes
    • Pressure – HIGH
    • Release – Quick Release
  • Mix Well before serving
